A Molecular Dining Experience in Malaysia!

Molecular gastronomy is partly food science combining physical and chemical transformation of ingredients while cooking to create a different culinary experience.

Chefs will borrow tools from the science lab and use them on the ingredients to create a unique menu for the diners.

This revolutionary form of cooking uses technical expertise to create a delicious work of art providing a surprising emotional and sensory experience.

Molecular gastronomy experiments have resulted in new innovative dishes like hot gelatins, airs, faux caviar, spherical ravioli, crab ice cream and olive oil spiral.

Heston Blumenthal from The Fat Duck restaurant discovered the ability of fat to hold flavor and created a dish that had three flavors -basil, olive and onion – with each taste being perceived in sequence.

In addition, Ferran Adria from the famous El Bulli restaurant used alginates to create his system of spherification that gells spheres which would literally burst in your mouth.

The pioneer of culinary arts education in Malaysia, KDU University College has introduced this exciting new form of cooking to her students with a RM2 million special kitchen. This is to ensure that the students are always on the cutting edge of their culinary skills . In addition to the traditional kitchen equipment, KDU culinary arts students will use sous-vide machine, liquid nitrogen, N20 charges, cream profi whip, smoking gun, and more.
