food scientists and chefs. They not only learn the theory but also incorporate a lot of applications in the cooking.” Through this three-year programme, students get to learn both culinary arts and food science.

The strength of the graduates will be in food product development. “Last time we have food scientists and chefs to come up with this, two different people, but now we only need one,” explains Chong.

The students need to put their product through five stages before they can market it, namely ideation, formulation, sensory evaluation, testing and packaging. fat cookies without compromising on the taste and texture. This is where knowledge of food science is most useful. The ingredients must be precisely measured. Not “a pinch of” or “agak-agak” ingredients. Also, they need to replace the fat from the butter that they’re planning to reduce with something else. The knowledge they’ve gained in chemistry and microbiology certainly comes in handy for this.

They know that fat makes the cookies creamy, so they need something which can act as fat yet still keep the richness of the cookies. “That’s why we use xanthan gum and emulsifier,” says final year student, Mohd Ludwig Mohd Nazri. “We reduce the fat to 45 per cent. But will the cookies taste the same? You’ll find out for yourself.” Mohd Ludwig and his classmate Nicholas Chan Li Wing subsequently proceed to bake three batches of cookies — control (full fat), with xanthan gum and another with emulsifier. “Don’t worry, xanthan gum and emulsifier are plant-based, so it’s safe to consume,” assures Nicholas.

set in the fridge before rolling and cutting out several pieces for each batch. After the cookies are baked, they undergo a sensory test. This is where the three cookies are evaluated based on appearance, flavour, taste, aroma and crunchiness. They need to find the best cookies out of the three.

We all take the test and score the cookies accordingly using our sense of sight, smell, taste, touch and hearing. Surprisingly, all three cookies look and taste similar. But one thing’s for sure, two are lower in calories as they contain less fat. SCIENTIFIC ANALYSIS Before they decide on which of the cookies will be marketed, the students also conduct a scientific analysis in the instrumentation room.

They use different equipment for different product. “All food products have their respective criteria,

especially when it comes to texture, such as hardness and stickiness. So we need to know the exact properties (based on the data collected) instead of just by sensory test which can be quite subjective,” explains Dr Chong. Since the students are developing low-fat cookies, they need to make sure the texture is similar or is as close to the full-fat variety.

To test the firmness of the cookies, a student shows us how data is collected using the texture analyser. Nowadays, analyses are easier to make thanks to the use of a computerised system that produces objective results. Suffice to say, the students need to know or have the knowledge of handling the equipment and calibrating the computers when conducting analysis work.

The recipe which scores the highest during the sensory test will then be finalised. The students will run nutrient analyses in the lab and generate labels using professional software such as Nutri Pro. When ready, they will source for suitable packaging materials and design a concept for it. This is where they will use their own creativity and come up with a prototype. “Since they know their product well, they get to decide which packaging can best present their product,” says Dr Chong.

OPPORTUNITIES GALORE Now, imagine what they can do with other food such as meat. Soon we won’t have to fret about our calorie intake as we happily tuck into a big fat burger or a packet of butter cookies. And for these students, they have wider job opportunities. “I’m enjoying the best of both worlds — arts and science,” says Nicholas.

“This course has taught me some very important lessons and I don’t make as much errors as before. For example, when making bread, I know when to stop mixing. I also know how to make healthier food. I made burger for my family recently, replacing the meat fillers with tofu, which mimics fat but is way juicier and healthier.”

Nicholas adds that he aspires to work in the food industry someday. It is Mohd Ludwig’s dream to help his father in his food business. The 22-year-old’s father, Mohd Nazrin @ Ludwig Gaisbauer owns German Delicatessen Sdn Bhd, a company that manufactures and distributes premium German sausages. “My dad is a chef so my life has always revolved around food. Hopefully I can contribute something to make his business better,” confides Mohd Ludwig. Whatever the future may bring, these students are ready to bring the hospitality industry to a new level — complete with lab equipment and chef hats.

UCSI University to Represent Malaysia in the 14th ASEAN Food Conference

UCSI University (UCSI) win the first prize for the 9th MIFT Food Science and Technology Seminar held on the 21-22 March 2015.

She will now represent the country in competing with some of the brightest minds in the region during the upcoming 14th ASEAN Food Conference. UCSI is the first private institution of higher learning to win this honour.

Cheong’s research is titled, ‘Optimisation of ternary emulsifier mixtures with improved physical stability properties of kenaf (Hibiscus cannabinus L.) seed oil-in-water nanoemulsions’. The kenaf seed oil is rich in antioxidants and bioactive compounds which are beneficial to human health.

However, extracts from the kenaf seed is in an oil form and it is not easily digested by humans. Cheong’s research focuses on creating a formulation for the oil that makes it easily dissolvable and stable (the mixture will not separate into oil and water components).

Edging out participants from 13 other public and private universities, Cheong expressed her appreciation to UCSI and her research supervisor Asst Prof Dr Nyam Kar Lin for the guidance and support.

“My advantage in this competition is that I was able to answer questions from the judges about my research. This is thanks to the university and my supervisor who pushed me to go beyond my comfort zone,” she said with a smile.

“The pay and benefits were great, but the research and development (R&D) work was not as detailed and my passion was in research,” she said, adding that the scholarship she received from UCSI made her dream possible.

She is expecting to complete her master’s qualification this year before continuing with UCSI’s Doctorate of Philosophy (Science).

Both she and her supervisor, Asst Prof Dr Nyam will be flying off to the Philippines on the 24-26 June to present her research and compete among some of the brightest minds in ASEAN.

UCSI was also well represented during the other competitions in the 9th MIFT Food Science and Technology Seminar. UCSI University students bagged second places in the Innovative Food Product Development Competition, the Oratory Competition, and the Postgraduate Poster Competition.

UCSI’s entry for the Food Product Development Competition was Cofalle – an instant pasta that was made from all natural ingredients that got its unique colours from plants such as the screwpine (pandan) leaf, beetroot, and carrot. The group consisted of Carine Lim Shu Shien, Christian Nathaniel, Elaine Lee Yi Lin, Marvin Supriatin, Mak Sook Yan, Sarah Byuti Cendana, Shamni A/P Rama Krishnan, Wan Pik Ki, Wong Shi Tian and Woo Keat Li, all of whom are pursuing the BSc (Hons) Food Science with Nutrition degree at UCSI University.

For the Oratory Competition, participants were given 10 titles related to food science and technology. A few minutes before their turn, the participants were informed of the topic that they should speak on for 10 minutes.

Sarah Byuti Cendana, a third year BSc (Hons) Food Science with Nutrition student, was given the topic ‘Liquid Nitrogen is Widely Used in Molecular Gastronomy. Should this be controlled?’

Her eloquence and interaction with the audience won over the judges.

“I want a career that is interactive – either a nutrition consultant or a teacher. So this competition is good training ground,” she said.

Making UCSI’s presence felt in the Postgraduate Poster Competition was Ghan Sheah Yee who is pursuing the MSc Applied Sciences, by Research. Her poster focused on her research ‘Antioxidant Interaction between Agarwood (Aquilaria Crassna) Young Leaves Crude Extracts and a-Tocopherol in Different Model Systems’.

Her research focused on the analysing the anti-oxidant properties of agarwood – known locally as gaharu – leaves.

This is part of a bigger research project on agarwood that is funded by UCSI’s research arm – the Centre of Excellence for Research, Value Innovation.

The event was attended by Senior Professor Dato’ Dr Khalid Yusoff – vice-chancellor and president of UCSI, Dr Siti Noorbaiyah – president of the Malaysian Institute of Food Technology, Prof Dr Teoh Kok Soo – deputy vice-chancellor, Academic Affairs and Support, Assoc Prof Dr Chan Hor Kuan – dean, Faculty of Applied Sciences and Sunny Koh, the deputy president of the Singapore Food Manufacturing Association.

The seminar was lauded by Senior Prof Dato’ Dr Khalid, who pointed that the competition provided an ideal platform for students to think of the latest global food concerns that are not limited to food security but should also include nutritional security.

“How do we provide food that is popular and nutritious, and contributes to the health of the people, and not the detriment of them?” he said, adding that it was the participants’ role to look into this and provide solutions that matter.

UCSI University’s Faculty of Applied Sciences students sweep four out of six awards

It was a combination of academic excellence, presentation skill, and confidence that saw UCSI University’s Faculty of Applied

Sciences students sweep four out of six awards at the 25th Intervarsity Biochemistry Seminar held at Universiti Kebangsaan Malaysia.

Joko Logis and Lim Wan Chi, won two of the Best Presentation awards for the oral category while Timmy Richardo and Wong Sok Yee snagged the Best Poster Awards in the poster category. Wong is currently pursuing her degree in food science and nutrition while the others are biotechnology students.

All four students acknowledged that the academic staff played an important role in nurturing and supporting them to achieve their full potential.

For the oral category, participants were judged on the presentation of their entries as well as their competency during the question and answer session.

Logis’s entry explored the quorum sensing inhibitory properties of manuka propolis on bacteria Vibrio fischeri. He explained that his research focused on the ability of manuka propolis – a resinous component of bee hives – to disrupt the chemical communication system in disease-causing bacteria.

“Basically by inhibiting quorum sensing in these bacteria, we could reduce their ability to cause disease,” he said, adding that

this could be an alternative approach to antibiotics.

Lim and Logis revealed that the experience of sharing their final year projects with their peers and experts from other universities was a unique way to gain insight on how their projects could be further improved.

Matching their success in the poster category were Timmy Richardo and Wong Sok Yee.

Pointing out that he never expected to win, Richardo credited his supervisor and the Faculty of Applied Sciences for the firm support and guidance he received when preparing his poster.

His poster illustrated the production of synthetically modified peanut allergens to make it soluble. A soluble allergen is easier to be used as a reagent for diagnosis and therapy and therefore paves the way in the study of peanut allergy.

Commenting on their success, the dean, Assoc Prof Chan Hor Kuan shared that both UCSI University and the Faculty are fully supportive of such competitions as it hones the students’ presentation and research skills.

“Even in their future careers as researchers, they cannot just be isolated in the lab. They need to convince non-scientific people – investors and members of the public – about their research,” she said.

Assoc Prof Chan shared that the Faculty’s focuses on the soft skills as well as on nurturing the students’ interest in research, particularly multidisciplinary research, to give its students an edge in the working world.
